This is my personal recipe using real maple syrup and vanilla. This pie is the result of researching many sweet potato pie recipes and through trial and error. Maple syrup makes the pie a little lighter and gives it a rare flavor.
Boil or steam sweet potatoes whole or diced (steamed and diced is faster); drain water, remove skins. Mash potatoes with butter. Add beaten eggs and evaporated milk and mix.
Combine brown sugar, maple syrup with cornstarch; add to potato mixture. Add pinch of salt, cinnamon, allspice, nutmeg, vanilla and lemon juice; mix well.
Pour into pie shells. Bake at 350 degrees for about 50 minutes, or until crust browns.
