Crispy, golden potato pancakes topped with mouth-watering filets of beef and accompanied by spicy apple chips. –Hanover Inn, Hanover, New Hampshire

POTATO PANCAKES

Ingredients

2 medium raw potatoes, grated and squeezed dry
1 small onion, grated
Salt and pepper
1 egg
Flour
Butter or oil for frying

Instructions

Mix together potatoes, onion, seasonings, and egg. Add enough flour to bind and make a moist batter. Spoon into frying pan and fry to golden brown on both sides.

CINNAMON APPLE CHIPS

Ingredients

2 cups apple slices
1/4 cup sugar
1 tablespoon cinnamon
Butter

Instructions

Toss apples with sugar and cinnamon and saute in butter until tender.

TOURNEDOS

Ingredients

4 tenderloin beef filets (3 ounces each)
Butter

Instructions

Saute beef in butter to desired doneness. To serve: Arrange potato pancakes on platter and set tournedos on top with apple chips in center of platter. Serve with sour cream.
