Yes, freeze your harvest! It’s so easy. I wash and dry the tomatoes, cut the core top and any bad spots and pop into a freezer bag. Get out as much air as you can. You can even add more tomatoes to the bag as the harvest goes along. To use just take out what you need and let thaw a bit. You can run under water to hasten this process. The skins will slip right off and you are ready to add to whatever you are making. I use in place of canned tomatoes for anything, sauces, salsa, soups, but I know where they come from and how they were handled.
