Before your New Year’s Resolutions fade, change up your diet with these delicious salad recipes. Spring is right around the corner, which means more fresh and nutritious fruits and vegetables from which to choose. Here are a couple of recipes courtesy of The Old Farmer’s Almanac Garden-Fresh Cookbook.

Garden-Fresh Salads

Crunchy Pear Salad
½ cup chopped walnuts
¾ cup chopped celery
¾ cup golden raisins
½ cup mayonnaise
1 cup cottage cheese
4 ripe pears, halved and cored
Bibb lettuce
In a small bowl, mix the walnuts, celery, raisins, mayonnaise, and cottage cheese to combine. Set aside in the refrigerator. Place the pear halves on a bed of lettuce and top each with a spoonful of the cottage cheese mixture. Makes 4 servings.

Strawberry Spinach Salad
2½ pounds spinach, trimmed
8 cups strawberries, hulled and sliced
3 cucumbers, thinly sliced
1½ cups scallions, sliced
½ cups snipped fresh mint (optional)
1 bottle (16 ounces) ranch-style salad dressing
Tear the spinach into bite-size pieces. Put the spinach, strawberries, cucumbers, scallions, and mint into a large bowl and toss. Just before serving, drizzle the dressing over the spinach salad and toss to coat. Makes 24 servings.
