The house phone rang as I was peeling a banana for my Mint Mango Smoothie; my sister was calling from college. She was having a bad day— one of those terrible-horrible-no-good-very-bad days. To help, I did what I do best: humor.
I talked her through my process of managing to pour ingredients into a blender, take photos, all the while talking to her on the phone. I’d yell at her to hold on a second while the blender roared, yet still try and talk over it.
She’d giggle and ask, “What are you doing?” I can’t say there weren’t a few swear words while the phone cord to our kitchen phone formed a booby-trap around my legs.
I may not have been able to solve her problems, but we kept each other company. I just wish she had been there to try the Mint Mango Smoothie from The Garden-Fresh Cookbook with me! It was mouth watering-good. The mint and mango was a surprising and refreshing combination, and the natural sugar in the mango with the high potassium in the bananas made this smoothie the ideal afternoon snack. Add a little frozen yogurt and it would be impossible to resist.
Best part, it’s so easy to make! Try this next time you need a filling snack that can be ready in five minutes. Warning, drinking this smoothie without a straw will result in a mustache!
Mint Mango Smoothie
1 small ripe mango, peeled, pitted, and coarsely chopped
1 banana, coarsely chopped
½ cup vanilla frozen yogurt
8 spearmint leaves
½ cup or more fresh orange juice, as needed for consistency
Put the mango and banana into a blender or food processor. Add the frozen yogurt, spearmint, and orange juice and blend until smooth. Add more juice as necessary for a smooth consistency. Makes 2 servings.
