A fine dish for Saturday lunch or Sunday supper, served with a Waldorf salad.
2 tablespoons butter, cut in small pieces
2 cups mashed carrots
3 eggs, beaten
2 cups grated cheese
1 small onion, grated
Salt and pepper
Combine all ingredients, mixing well to blend. Turn into greased 1-½-quart casserole dish and bake at 325 degrees F for 40 minutes.
