Avocado Mousse


1 package (3 ounces) lime gelatin
1 cup boiling water
2 cups mashed ripe avocado (3 small)
1 small onion, grated
1/2 cup mayonnaise
Juice of 1 small lemon or 1 large lime
6 sprigs parsley, finely cut
1/2 teaspoon salt
3/4 cup sour cream


Dissolve the gelatin in the boiling water and cool until syrupy. Combine remaining ingredients in a blender. Whirl until smooth – only a few seconds. Add cooled gelatin and blend for a few seconds more. Pour into an oiled mold and refrigerate until firm. Turn out onto a bed of lettuce, and garnish as desired.
