2 pounds any combination of ground beef, pork, or lamb
2 onions, chopped
1 pound canned tomatoes
1-1/2 tablespoons sugar
2 tablespoons curry
2 tablespoons vinegar
2 firm bananas, peeled and sliced
1 apple, peeled, cored, and chopped
2 tablespoons apricot jam or 1 can apricots
1/4 cup slivered almonds
1/2 to 1 cup tomato juice, for thinning
Brown meat, drain off fat, saute onion, then combine all ingredients and simmer for a half hour. Thin with tomato juice, as needed, and serve over rice.
Makes 8 servings.
