Blueberry Cake Cups For Two


1/4 cup flour
1/2 teaspoon baking powder
dash salt
1/4 teaspoon cinnamon (optional)
1/4 cup sugar
1/4 cup milk
1 tablespoon melted oleo
1 teaspoon vanilla extract (optional)
1 cup blueberries, divided (fresh or frozen)


Mix flour, baking powder, salt, and cinnamon in a bowl. Mix sugar, milk, oleo, and vanilla extract in a separate bowl. Add dry mixture to wet mixture and stir until just blended.

Grease two ovenproof coffee mugs or ramekins and fill with ½ cup berries. Cover with batter, then top with remaining ½ cup of berries.

Bake at 375 degrees for 30 minutes, or until brown on top. Serve warm.
