Carolyns Coconut cream pie


1 1/3 cups Dry powdered milk
1/2 cup sugar or Splenda
7 Tablespoon cornstarch
2 eggs
4 cups water (3 1/2 cups HOT & 1/2 cup cool)
1 cup coconut flakes (toasted a bit in oven)
1 Tablespoon Vanilla
1 Tablespoon butter
Graham cracker crust or a baked pie crust
Whipped cream topping or cool whip


Mix dry milk,sugar (or splenda), & cornstarch in microwave bowl.
Add the 3 ½ cups of HOT water and mix well. Beat the 2 eggs thoroughly with the ½ cup cool water and add to the bowl with other ingredients.
Microwave for 1 minute and mix, keep doing this for about 3 minutes then add ¾ cup of the toasted coconut and microwave until pudding thick.
Remove from Microwave carefully-it is very hot! Add vanilla & butter and mix.
Sprinkle about 1 Tablespoon toasted coconut in bottom of crust and pour hot mixture into crust.
When cooled….top with whipped topping or cool whip and sprinkle remainer of toasted coconut on top. Enjoy!!

I usually have not liked

I usually have not liked coconut, I made this and my neighbors thought it was great. I ate a piece also and I must say....I now like coconut. That is a new one for me and also posting a recipe on a site is also a first for me also.
