Cranberry Nut Bread


2 cups sifted all-purpose flour
2 cups sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup fresh cranberries, coarsely chopped
1/4 cup shortening
3/4 cup orange juice
1 egg, well beaten
1 tablespoon grated orange rind
1/2 cup chopped nuts


Preheat the oven to 350ºF. Grease a 9 x 5-inch loaf pan.

Sift together flour, sugar, baking powder, baking soda and salt. Cut in shortening until mixture resemble coarse cornmeal. Combine orange juice and grated rind with well beaten egg. Pour all at once into dry ingredients, mixing just enough to dampen. Carefully fold in chopped nuts and cranberries. Spoon into the prepared loaf pan. Spread corners and sides slightly higher than the center. Bake for 55 minutes or until a toothpick inserted into the center comes out clean.

Am I to assume that the oven

Am I to assume that the oven temperature is 350 and the time to bake is 1 hour? That info is not included with the recipe. Also, being for one loaf, 5 x 9 pan?
