Cucumber Salad


2 medium-sized cucumbers
1/4 cup water
3 tablespoons vinegar (or to taste)
1 teaspoon sugar (or to taste)
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
thinly sliced onion (optional)


If cucumbers are waxed, pare. Otherwise, scrub and slice thinly into a small bowl. Combine remaining ingredients: pour over cucumbers. Cover and refrigerate at least 1 hour, stirring occasionally.
