I recently went on a trip to my husband's family in Morocco, and I had this at his mother's house. This is something great to serve as an appetizer or just as a snack (as we had).
Wash potatoes in salted water, then mash with a masher. Place potatoe puree in bowl and add 1 egg, parsley, cilantro, garlic, cumin, salt, and pepper. Mix well. Make balls out of the mixture, and flatten lightly with fingers. Dip one at a time in 1 beaten egg, then dip into flour. Shake off excess flour if needed. Fry in hot oil brown on both sides.
