Egg and Potato Fritters Moroccan-Style


4 diced potatoes
2 eggs
3 tablespoon of chopped parsley and cilantro
4 cloves crushed garlic
1 tablespoon cumin
1/4 teaspoon pepper, salt


Wash potatoes in salted water, then mash with a masher. Place potatoe puree in bowl and add 1 egg, parsley, cilantro, garlic, cumin, salt, and pepper. Mix well. Make balls out of the mixture, and flatten lightly with fingers. Dip one at a time in 1 beaten egg, then dip into flour. Shake off excess flour if needed. Fry in hot oil brown on both sides.
