Fish Surprise


1 tablespoon olive oil
1 chopped onion
angel hair pasta
1 package fresh spinach, cooked (or frozen, thawed and drained)
1 pound haddock fillet, whole or divided
1 can cream of cheese soup
1 can cream of shrimp soup
salt and pepper to taste


Saute onion in olive oil then place in an 8x8-inch casserole dish.

Cook pasta and drain. Add to onions in casserole dish.

Place spinach on top of the pasta, followed by the haddock fillet.

Mix soups together and pour over the spinach and haddock. Bake 30 to 40 minutes. Season to taste.

Ok, I tried this recipe but

Ok, I tried this recipe but the local grocery didn't have the haddock, so I had to go with salmon. Pan seared it a bit before putting it on the spinach. Also had to go with broccoli/cheese soup instead of the cream of cheese soup. It was deliciousss. Next time though, I'm thinking a little sliced avocado on the fish with maybe a little drizzle of Worcestershire before adding the soup mixtures. This fish recipe is a definite keeper.
