Fran's Chowchow


1 gallon chopped green tomatoes
1 gallon chopped cabbage
1/2 gallon chopped onions
1 bunch celery
6 bell peppers, seeded
6 hot peppers, seeded
3/4 cup salt
4 cups sugar
2-1/4 cups brown sugar
2 quarts cider vinegar
1 box pickling spice


Using a food processor fitted with a coarse blade, grind all of the vegetables. Put vegetables into a pot and sprinkle the salt over the mixture. Let stand for 2 hours. Drain, discarding the liquid. Put vegetables into a large kettle. Add sugars, vinegar, and spice. Bring to a boil, reduce heat, and simmer for 1 hour, stirring occasionally. Remove from the heat. Pour hot relish into sterilized jars, seal, and process in a boiling-water bath for 10 minutes; start counting the processing time when the water starts to boil.


Makes 8 half-pint jars.

Thanks for the recipe. I don't think I need THAT MUCH since it's just and the wife. But I could cut it half or maybe to 1/3 rd. Thank You again. Mel Burnett
