A relish consisting of cabbage, green tomatoes, and a whole variety of fresh vegetables. A great way to put your garden’s bounty to good use at the end of the growing season.
Using a food processor fitted with a coarse blade, grind all of the vegetables. Put vegetables into a pot and sprinkle the salt over the mixture. Let stand for 2 hours. Drain, discarding the liquid. Put vegetables into a large kettle. Add sugars, vinegar, and spice. Bring to a boil, reduce heat, and simmer for 1 hour, stirring occasionally. Remove from the heat. Pour hot relish into sterilized jars, seal, and process in a boiling-water bath for 10 minutes; start counting the processing time when the water starts to boil.
