Fresh Peach Pie
Magnificent! You will fantasize about this one in midwinter. –Woodbound Inn, Jaffrey, New Hampshire
Ingredients
1 cup sugar
3-1/2 tablespoons cornstarch
1/2 cup water
1 tablespoon butter
7 or 8 fresh peaches, peeled
9-inch pie shell, baked
whipped cream, for topping
slivered almonds, for garnish
Instructions
Combine sugar and cornstarch in a saucepan. Add water and butter and bring to a boil. Mash 3 peaches and add to syrup. Reduce heat, simmer until thickened, and cool. Slice remaining peaches into pie shell, pour syrup mixture over sliced peaches, and chill. Top with whipped cream and garnish with slivered almonds.

Fresh Peach Pie
This is absolutely awesome ! I LOVE PEACH PIE . . . but they are sometimes soggy, because the moisture content can be different from one batch to another. THIS solves my problem ! YAY ! Thank you !
