Fruit-Filled Muffins


1/4 cup shortening
1/4 cup sugar
2 eggs, well beaten
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup milk
1 cup Fruit Sauce, or canned cranberry sauce


Preheat oven to 400 degrees F. Grease muffin tins. Cream shortening and sugar, and fold in beaten eggs. Sift together dry ingredients. Add egg mixture to flour mixture and then stir in milk. Pour batter into greased tins, filling each hole ⅓ full; spoon in a layer of Fruit Sauce (see below), top with more batter, and sprinkle with cinnamon. Bake 20 to 25 minutes or until golden on top. Serve warm.
