1/2 cup shortening
1/2 cup sugar
1 egg, beaten
1 cup Grandma's Molasses
2-1/2 cups flour
1-1/2 teaspoons baking soda
1/2 teaspoon ginger (more if desired)
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup hot water (or a little less)


Cream shortening and sugar until light and fluffy. Add beaten egg and molasses, and mix well. Sift together dry ingredients and add, mixing well. Add hot water and beat until smooth. Bake in a greased 9-inch square shallow pan for 25 minutes at 350 degrees F, or until done. Serve with whipped cream.

This recipe is identical to the one my mother used for her soft molasses cookies. Just raise the oven temp to 375 and bake about 8-10 minutes. She also frosted them while hot with a dollop of confectioner's sugar mixed with just enough vanilla extract to make a thick glaze. This recipe is good either way, as cake or cookie. My all-time favorite in both categories :)
