Green Goddess Salad Dressing
Said to have been President Eisenhower's favorite dressing, this concoction turns a green salad into a work of art. Add a can of tuna fish or chopped ham and buttered croutons to make a light meal.
Ingredients
1 cup mayonnaise
1/2 cup sour cream
1 clove garlic, smashed
2 tablespoons minced scallions
2 tablespoons white wine vinegar or tarragon vinegar
1 tablespoon anchovy paste
2 teaspoons lemon juice
1/4 teaspoon freshly ground black pepper
Instructions
Combine all ingredients in a blender and pulse until smooth. Cover and chill at least 30 minutes to let flavors combine. Store in the refrigerator for up to 10 days.
Yield:
about 1-3/4 cups dressing

Years ago, my Aunt Lois made this dressing. I was only 10 or so and not interested in cooking or recipes. When I would go to a restaurant, I would ask for Green Goddess Salad Dressing, but no one ever had it and some had never heard of it. This captures my Aunt Lois' recipe spot on!! Thank you!!
