Green Tomato Pie
At the end of the tomato season, when frost nips the garden, make Green Tomato Pie! This old family favorite has a unique flavor that’s similar to a tart apple pie.
Ingredients
3 ½ cup of sliced Green Tomatoes
3 Tablespoons Flour
1 1/3 cup Sugar
1 Tablespoon Lemon Juice
1 Teaspoon grated lemon rind
3 Tablespoon Margarine
½ Cup Raisins
1 Teaspoon Ground Cinnamon
Pastry for 2 Crust Pie (Top & Bottom Crust), 10-inch Pie Pan
¼ Teaspoon Salt
Instructions
Combine tomatoes with: sugar, flour, salt, lemon juice, lemon rind, Cinnamon, and raisins. Place this filling in a pastry-lned pan. Dot with butter and cover with top crust. Bake in 450 degree oven for 10 minuets. Reduce heat to 350 degree and bake another 30 minutes—OR until tomatoes are tender.
