Hanover Inn's Cream of Broccoli Soup


1 cup chopped onions
1 cup chopped raw potatoes
1/2 cup chopped celery
1 cup chopped leeks, white part
2 cups finely chopped broccoli (including stems and leaves)
1 cup butter
2 cups water
2 chicken bouillon cubes
2 cups hot milk
Salt and pepper


Saute vegetables in butter until butter starts to brown. Add water and chicken bouillon cubes (or equivalent) and cook until tender. Put through food mill, then add hot milk and salt and pepper to taste.


Serves 8.
