Healthier Coleslaw


1 cup grated carrots
1 cup grated cabbage
1/3 cup drained, mashed tofu
1/3 cup chopped scallions
1/4 cup dulse flakes (flaked kelp)
1 teaspoon lemon juice
1/2 teaspoon mustard powder
1/2 to 3/4 cup soy (or other) mayonnaise


Mix all ingredients and serve as a side salad or as a sandwich filling in pita pockets or tortilla wraps.


Makes 4 servings.
