Herb Stock


3 to 4 stems and leaves of thyme, parsley, summer savory, basil, and chives
3-1/2 cups cold water
1 potato, peeled and chopped
Salt to taste


Wash herbs and shake dry. Place in saucepan and mash with spoon. Add water, potato, and season with salt. Simmer, partially covered, 10 minutes. Remove from heat and let cool to room temperature. Strain.
