Hot and Spicy Salad Dressing


2 habanero peppers, veins and seeds removed, minced
1 tablespoon lime juice
1 tablespoon sugar
1 tablespoon vinegar
1/2 teaspoon cilantro, chopped fine
1 cup olive oil


Combine first five ingredients. Stir well. Slowly drizzle in olive oil, whisking as you go, to form an emulsion. Chill until use.


About 1-1/4 cups dressing
