A delightful souffle that makes an elegant and refreshing finish to any meal.
Preheat the oven to 350 degrees F. Grease a 1-½-quart souffle dish.
In a large mixing bowl, combine the sugar, flour, and salt and mix well. Add the butter, lemon juice, and lemon zest. Blend with a whisk. Add the egg yolks and milk and beat until light.
In a separate bowl, beat the egg whites until stiff. Fold into the lemon mixture. Pour into the souffle dish. Set the souffle dish in a large pan and place in the oven. Fill the pan with hot water. Bake for 1 hour. Serve immediately.
