Lobster Salad


1 cup wild rice
4 cups water
8 ounces cooked fresh lobster meat
2 cooked portobello mushrooms, sliced
1/2 Vidalia onion, chopped
1 tomato, chopped
1 red bell pepper, chopped
vinaigrette of your choice


Bring the rice and water to a boil, then simmer for 30 to 45 minutes. Cool, then add other ingredients and toss with the vinaigrette. Chill for about an hour.


Makes 4 to 6 servings.
