Maine Wild Blueberry Corncakes


1/4 pound unsalted butter
1/4 cup sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon salt
1/2 cup flour
1 cup cornmeal
2 eggs
1/4 cup buttermilk
2 cups wild Maine blueberries


Preheat oven to 350 degrees . Cream butter with sugar. Add spices and salt. Add flour and cornmeal. Add eggs and buttermilk. Fold in blueberries. Form into cookie size units OR baked as a cake for 20 minutes on a pre-greased cookie sheetpan.
