Mandarin Muffins


2 cups flour
1-1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup soft butter
3/4 cup sugar
1 egg, slightly beaten
2 eleven-ounce cans of mandarin oranges, drained
1/4 cup golden raisins
1/2 cup orange juice
butter for greasing


Sift together flour, baking powder, baking soda, and salt. Set aside.

In food processor, combine butter and sugar. Then add egg, mandarin oranges, raisins, and orange juice. Process quickly together.

Add wet ingredients to dry ones, and mix with a spatula. Grease muffin tins and fill with ⅓ cup batter for each muffin. Bake at 400 degrees F 14 to 15 minutes.
