Maple Bran Muffins


3/4 cup maple syrup
2 eggs
2-1/2 cups crushed bran flakes
1 cup sour cream
1 cup flour
1 teaspoon baking soda


Beat syrup and eggs until well blended. Beat in bran flakes and let stand for 5 minutes. Using a wooden spoon, beat in sour cream. Stir in flour and baking soda, mixing just until flour is moistened. Batter will be lumpy. Spoon into greased muffin tins and bake at 400 degrees F for about 20 minutes or until lightly browned. Remove from pan and serve hot.
