Mashed Potato Casserole


10 medium-size potatoes, peeled and halved
1 cup sour cream
1 cup cottage cheese
1/2 cup (1 stick) butter, softened
1 tablespoon finely chopped onions
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup grated Parmesan cheese
freshly chopped parsley, for garnish


Preheat oven to 325 degrees F. Lightly coat a large casserole with non-stick cooking spray.

Boil potatoes in salted water until tender. Mash or put through a ricer. While still hot, add sour cream, cottage cheese, butter, onions, salt, and pepper. Mix well. Put mixture in prepared casserole and sprinkle Parmesan on top. Bake for 30 minutes. Before serving, garnish with parsley.


Serves 8-10.
