In a large saucepan, heat oil over medium-high heat. Add onions and garlic and cook for 2 minutes. Add pepper flakes, zucchini, and bell pepper. Cook for 3 minutes. Add tomatoes, salt, herbes, and black pepper. Bring to a boil; reduce heat to medium. Cook uncovered for 10 to 15 minutes, or until slightly thickened. Stir occasionally (sauce will not be really thick). Remove from heat. Stir in turkey and olives.

Preheat oven to 375 degrees F. Grease a 9x13-inch baking dish.
While sauce cooks, cook pasta in a pot of boiling salted water until just tender, according to box directions. Drain. Return pasta to cooking pot. Add turkey sauce, ricotta, basil, and ½ of both feta and Parmesan. Mix well. Spoon mixture into prepared baking dish. Sprinkle with remaining feta and Parmesan. Place on a baking sheet in case of bubbling over. Bake for 35 minutes. Let stand for 10 minutes before serving.
