Moist Oatmeal Raisin Muffins


1-1/2 cups water
1 stick of margarine
1 cup quick oats (one minute cooking kind)
1/2 cup raisins
3/4 cups white sugar
3/4 cups dark brown sugar
1 teaspoon baking soda
1-1/2 teaspoons cinnamon
1-1/2 cups flour
1-1/2 teaspoons baking powder
2 eggs


Preheat oven to 350 F. Bring water to a boil and immediately remove from burner. Add to the water: margarine, quick oats, and raisins. Gently stir and let mixture set for 20 minutes. While oatmeal mixture is cooling prepare the dry ingredients; white sugar, dark brown sugar, baking soda, cinnamon, flour, and baking powder. After the oatmeal mixture has set for 20 minutes, combine with dry ingredients along with the eggs. Pour into greased and floured muffin tins, and bake for 28 minutes.
