Molasses-Ginger Cookies

One of the “logs” you make with this recipe will produce 24 cookies, so unless you’re baking for your family reunion, you might want to freeze the rest of the dough for future treats.

1 cup sugar, plus extra for garnish
1/4 cup dark molasses
3/4 cup (1-1/2 sticks) unsalted butter, softened
1 large egg
2 cups flour
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon salt
2 teaspoons baking soda
3 ounces crystallized ginger, cut into small pieces

In a large bowl or the bowl of a standing mixer, combine sugar, molasses, butter, and egg.

In a separate bowl, mix remaining ingredients. Add to the first bowl and mix well.

Form 3 logs, each approximately 8 inches long and 1-1-½ inches in diameter.

Wrap in waxed paper or parchment and refrigerate until firm.

Heat oven to 350º.

When dough is firm, remove wrap and cut into 1-inch rounds. Toss each slice in granulated sugar. Place on a cookie sheet lined with parchment paper.

Bake 8-12 minutes, depending on size of raw dough.
