Mousse of Spinach and Carrot with Lemon Sabayon Sauce

CARROT MOUSSE

Ingredients

2 pounds carrots, peeled and cut into chunks
2 tablespoons unsalted butter
1/2 cup heavy cream
4 egg yolks plus 1 whole egg, lightly beaten
Salt and freshly ground pepper to taste
Pinch of cayenne pepper

Instructions

Steam carrots 15-20 minutes (until tender). Drain well, put in food processor with butter, and process until smooth. Remove from processor, cool, and stir in remaining ingredients. Set aside while preparing spinach mixture.
