Mystery Cake


1 cup salad oil
2 cups sugar
4 eggs
2 cups all-purpose flour
2 teaspoons soda
2 teaspoons cinnamon
3 cups grated carrots
1 cup chopped nuts


Cream together the oil and sugar. Beat in the eggs. Sift together the flour, soda, and cinnamon and add. Beat 1-½ minutes. Fold in the carrots and nuts. Bake in a greased loaf pan (9x5x2-¾ inches) at 350degrees F for 1 hour. Frost when cool with White Gold Icing.
