Nanny Phillips Pumpkin Jam


32 cups pumpkin diced small
16 cups sugar
3 lemons
2 oranges


Dice pumpkin and add sugar, leave overnight in jam pot. Dice lemon and oranges, boil in separate pot until tender. Next day add orange and lemon mixture to jam pot and cook to 220 degree F being careful to stir frequently so the jam does not scorch. This can take up to three hours depending on temperature. Pour into heated mason jars, cover with mason caps soaked in hot water and allow to cool. Makes excellent pumpkin jam.
