Old Dutch Cole Slaw


1 young cabbage, finely shredded
1 cup heavy cream
1/2 cup sugar
1/2 cup vinegar
1 teaspoon salt
white pepper to taste


Beat together the cream, sugar, vinegar, salt, and pepper until of the consistency of thin whipped cream. Mix the sauce with the shredded cabbage just before serving. Garnish with sprigs of watercress.
