My daughter loves these cookies! I leave out the nutmeg, but I do use the lemon rind. Her classmates love them as well and ask me to bring them for school parties. There's something about a nice, old-fashioned cookie that even sophisticated 3rd graders appreciate.
can the lemon rind be optional?
Yes, though we think the lemon rind adds flavor (without the sourness).
