Pepper Relish


24 sweet peppers, any color you like
12 large sweet onions
3 cups apple cider vinegar
1-1/2 cups sugar
4 teaspoons salt
2 tablespoons celery seeds


Cut and seed peppers. Cut and peel onions. Run through a food chopper with a coarse blade (DO NOT use a food processor). Add all ingredients into a large pot and boil slowly for 15-20 minutes. Seal in clean jars using the hot pack method.
