Pineapple-Cheese Ball


2 packages (8 ounces each) cream cheese, at room temperature
1 can (8-1/2 ounces) crushed pineapple
1/4 cup finely chopped green bell pepper
2 tablespoons finely chopped onion
2 cups chopped walnuts


In a food processor or by hand with a fork, beat the cream cheese until smooth. Mix in the pineapple, green pepper, and onion. Reserve 1 cup of the nuts and mix in the remaining 1 cup of nuts. Shape the mixture into a ball, roll it in the reserved nuts, and refrigerate until well chilled. Serve with crackers.


10 to 12 servings

This is an excellent recipe, the smooth cream cheese mixed with the sweetness of the pineapple and the slight tang of the green pepper is like eating a piece of cream pie! So good, the nuts add the 'crunch' to the mix...meets our desire to taste something sweet, salty, creamy and savory in one bite!!! Great recipe!
