Portuguese Toast


4 eggs, well beaten
1 cup milk
1 teaspoon salt
1 teaspoon vanilla
cooking spray
12 slices Portuguese sweet bread
2 cups cornflake crumbs
1/2 cup melted butter
maple syrup


Combine eggs, milk, salt, and vanilla. Mix well. Coat 2 sheet pans with cooking spray. Dip bread slices in mixture, then coat both sides of bread with cornflake crumbs. Place on prepared sheet pans. Drizzle with melted butter. Bake at 450 degrees For 10 to 15 minutes. Serve with warm maple syrup.
