Potato Stuffing


4 cups mashed potatoes
2 cups bread crumbs
1 cup minced onion
1/2 cup chopped celery
1/2 cup butter
2 eggs, well beaten
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon poultry seasoning, or 1/2 teaspoon sage and 1/2 teaspoon thyme


Combine potatoes and crumbs. Saute onion and celery in butter until tender. Add to potato mixture. Add eggs and seasonings and mix well. Stuff loosely into turkey.


Makes enough for an 8-pound bird.
