Puff Pancakes


6 eggs
3/4 teaspoon salt
1/2 cup sugar
1 cup flour
1 cup milk
1/4 cup orange juice
3 tablespoons butter, melted


Preheat oven to 450 degrees F. Beat together the eggs, salt, and sugar. Add the flour and beat again. Add the milk, orange juice, and butter and beat again. Pour about ½ cup of the batter into each of 8 well-greased 6-ounce ramekins. (The inn recommends spraying the ramekins with vegetable cooking spray.) Place in the oven on the center rack and bake 18-20 minutes or until puffy and lightly browned.


Serves 8.
