Pumpkin Pie


2 cups pumpkin puree
2/3 cup brown sugar
1/3 cup granulated sugar
1 tablespoon flour
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon grated nutmeg
1/2 teaspoon ginger
1/4 teaspoon allspice
pinch of black pepper
1 cup light cream
1/3 cup milk
2 eggs, beaten
1 teaspoon vanilla extract
1 pie shell (9 or 10 inches)


Preheat oven to 400 degrees F. in a large bowl, combine all pie-filling ingredients and stir with a large whisk until smooth. Pour mixture into partially baked pie shell. Bake for about 45 minutes, until filling is set but still slightly wobbly in the center. Cool pie on a wire rack. Serve with whipped cream or ice cream.
