Raisin and Cottage Cheese Buns

Roll the dough up tightly so the filling inside will not spill out when the cylinder of dough is cut into pieces. Serve these nutritious buns warm with a white icing.


1 cup cottage cheese
3 tablespoons milk
1 egg, separated
1/3 cup oil
1/3 cup sugar
1 cup whole wheat flour
1/2 cup white flour
2 teaspoons baking powder
1/2 cup raisins
1/2 cup chopped nuts
5 tablespoons sugar
1 tablespoon cinnamon


Mix together cottage cheese, milk, egg yolk, oil, and sugar. Mix flours and baking powder together and add to cottage cheese mixture. Mixture will be sticky. Knead on lightly floured board for only a short time and roll into a 17x8-inch rectangle. Baste with the egg white. Sprinkle with raisins, nuts, sugar, and cinnamon. Roll up to make a long cylinder and cut into 12 pieces. Place in greased pan and bake in 350 degrees F oven for about 25 minutes.
