2 shallots, sliced
2 tablespoons butter
1 tablespoon olive oil
1 small red cabbage, thinly sliced
1/2 cup apple cider
2 firm apples ('Granny Smith' or other)
salt and pepper, to taste
Saute the shallots in the butter and olive oil. Add cabbage and cider and cook about 5 minutes, until just tender. While cabbage is cooking, peel and slice the apples. Add to cabbage, season to taste, and serve warm.
Makes 4 servings.
