Roasting shallots are sweet, caramelized, creamy, and oh-so-tender! All you need are shallots, olive oil, thyme, and salt. Simple! They are a great side dish for a main meal, especially ribeyes or roasted chicken.
Just peel the shallots and the oven does the rest! They should come out so tender that you could even spread the shallots on a baguette! Mmmm!
Tip: The only feedback we’ve gotten is—more, please! You may want to triple the recipe if you can get your hands on lots of tender shallots.
Preheat oven to 425 degrees F. Make sure shallots are peeled and cut into halves.
Pour olive oil in a cast iron skillet or roasting pan. Place shallots on top, cut side down.
Drizzle with remaining olive oil, then season with salt. Cover shallots with your thyme springs.
Roast for 25 to 30 minutes.
