Sandy’s Cottage Cheese Pie
In the Franks' house, this pie was a dessert but we also called it one of our breakfast pies! The kiddos love this one.
Ingredients
1 Pie Shell, unbaked
2 Medium to Large Eggs
1 Cup + 2 Tablespoons Sugar
1 Tablespoon Flour, All Purpose
1 Tablespoon Cornstarch
2 Teaspoons Cinnamon
16 Ounces Cottage Cheese, 2%
Instructions
Preheat oven to 400 degrees. Mix eggs, sugar, flour & cornstarch and stir in the cottage cheese. Pour ingredients into an UNBAKED pie shell. Sprinkle the top with the two tablespoons of sugar and the cinnamon. Bake for 30-35 minutes.
