Sauteed Lobster


2 or 3 slices salt pork
1/2 teaspoon vinegar
meat of 1 lobster, cut up


Cut salt pork into small pieces. Add vinegar to lobster meat. Use all the meat from the lobster – if you saute just the tail, you won’t get the nice red color you want. Saute slowly, allowing the lobster to absorb the flavors.
