Scalloped Oysters


1 cup soft breadcrumbs
1 cup dry cracker crumbs
3/4 cup melted butter
1 quart oysters, picked over
1 teaspoon salt
pinch of mace
1 tablespoon lemon juice
2 tablespoons chopped parsley
1/2 cup oyster liquor
1/4 cup milk or cream


Mix the breadcrumbs, cracker crumbs and butter and spread half of the mixture in a large, shallow pan. A big pie pan does well. Arrange the oysters in two layers on the crumbs, add the remaining ingredients, and top with the rest of the crumbs. Bake in a hot (400 degrees F) oven for 30 minutes.
